Dressing 3 tablespoons water 1 tablespoon Dijon mustard 1 tablespoon maple syrup 1 clove garlic, minced 2 tbsp minced shallot Salt and pepper, to taste
Instructions
Assemble the salad in a bowl by adding spinach, blueberries, almonds, diced beets, thinly sliced endive, and nutritional yeast.
To make the dressing, add all ingredients to a small jar, then shake vigorously and drizzle your salad with dressing. Toss the salad and enjoy right away!
